ParticipantThis recipe serve for 45 people, plx adust it urself:
Green apples 3kg
Breadcrumbs, stale 300g
Butter 450g
Sugar 300g
Cinnamon 30g
Raisins 105g
Filo pastry 1/1/2pkt
Walnut, shelled 90g
Melted butter 1/1/2pkt
Icing sugar –
Vanilla sauce:
Milk 3L
Vanilla essence Drops
Sugar 420g
Egg yolks 30Heat the butter in a frying pan and fry the breadcrumbs until golden colour and cool in a s/s bowl
Wash raisins, drain and dry in a cloth
Chop walnuts coarsely
Prepare 2 litres of vanilla sauce
VANILLA SAUCE
Place milk and few drops of vanilla essence in a pan and bring to the boil
Place sugar and egg yolks in a basin, mix together and whisk in the milk quickly and thoroughly
Return the mixture to the pan and heat gently, stirring with a wooden spoon until it thickens and coats the back of the spoon
Do not allow to reboil in the sauce will curdle. Pass through a fine strainer and keep warm in a bain-marie of warm water
Store the vanilla sauce in a warm place
Cooking
Peel, core and slice apples thinly
Mix apples, fried breadcrumbs, sugar, raisins, spice and chopped walnuts in a large s/s bowl
Pre-heat oven to 220oC
Brush baking trays with a thin sheen of melted butter
Line a clean cloth on worktop and arrange 2 stacks of filo pastry, each containing 5 sheets
Brush pastry with melted butter
Spead 800gm filling on pastry allowing at least 2 cm clean margin
Roll up with the help of cloth and seal both end
Place on baking tray and brush with butter
Baking in oven for 20 minutes until golden colour
Cut strudel into portions, each yield at least 8 portions
Dust icing sugar for required portions
Serve with warm vanilla sauce
