Pasta with Tuna and Olives
2 tbsp Olive oil or corn oil
2 garlic cloves, minced
1 can tomatoes
1/2 tsp each dried oregano, salt and pepper
1/4 tsp hot pepper flakes
1 lb spaghetti
1 cup pitted black olives
1/4 cup chopped fresh parsley
2 cans solid light Tuna (drained)
In saucepan, heat oil over medium heat.
Add garlic and cook for 10~20 seconds
Add tomatoes. Oregano, salt , pepper and hot pepper flakes; bring to boil.
Reduce heat and simmer 15~20 minutes
Cook pasta according to directions; drain.
Stir olives, parsley and tuna into sauce.
Toss this with pasta and serve
Note: you can substitute pasta with 烏冬
Serve 6~8.
