ParticipantIrish soda bread
Serves 6
1 cup whole wheat flour
3 cups all purpose white flour
1 cup Quaker oaks ( not instant)
1 tsp baking soda
1 1/2 tsp salt
1 tbsp sugar
1tbsp butter/margarine
2 cups buttermilkPreheat oven to 190 degree C
In a mixing bow, combine flours. Oaks, baking soda, salt and sugar. Mix thoroughly.
Using a pastry blender or fork, cut butter into the flour mixture until mixture resembles crumbs. Add buttermilk all at once and stir with fork just until moistened.
Turn dough out onto a lightly floured surface and knead 8~10 times.
Pat and form the dough into a circular loaf about 2 inches high. Using a sharp knife slash a cross in the top of the loaf. Place on an ungreased baking sheet and bake in the preheated oven for 40 minutes until golden brown.<hr>
