1 lb penne pasta
1 cup grated Parmesan cheese
3 tbsp olive oil/ oil
3/4 tsp salt
1 each red, yellow & green peppers, cut 1/4 inches strips
2 cups quartered (cut) mushrooms
1 medium onion chopped
3/4 lb boneless, skinless chicken breast, sliced in to thin strips
1/2 tsp minced garlic
1 6 oz jar of marinated artichoke hearts
3 tbsp red wine vinegar
1/2 tsp freshly ground black pepper
1/2 tsp basil leaves chopped.Cook pasta as per pack directions. Drain return to pot. Toss with Parmesan cheese.
Cover to keep warm.
In a large skillet, heat oil and salt. Add peppers, mushrooms, onion, chicken and garlic. Saute 8~10 minutes or until chicken is cooked.
Add artichoke hearts and their marinate, vinegar, pepper and basil.
Cook for 2~3 minutes more.
Toss this with pasta and serve
Serves 5~6
Note: you can substitute pasta with 烏冬<hr>
