(make 96 cookies)
1 1/3 cups unsalted butter, at room temperature
2 1/2 cups granulated sugar
4 eggs
4 tsp vanilla extract
5 ~5 1/4 cups all-purpose flour
2 tsp baking powder
1 1/2 tsp saltIn a large mixing bow using an electric mixer, beat butter and sugar until very creamy. Beat in eggs and vanilla. In another mixing bowl, use a fork to blend 5 cups of flour with baking powder and salt. Gradually stir into egg mixture until just combine.
OVER MIXING MAY MAKE A TOUGH COOKIE. Then, if needed, stir in remaining flour, one tablespoon at a time, until dough is soft but not sticky. All of flour may not be needed.Divide dough into quarters. From into balls, then flatten slightly. Wrap each in plastic warp and refrigerate until firm, at least 1 hour or up to 3 days. Or overwrap with foil and freeze up to 1 month.
Preheat oven to 190 degree C. lightly grease baking sheets or coats cooking spray [pam]. On a lightly floured surface, roll out dough 1/8 inches thick. Cut out shapes. For sharp edges, dip cookie cutter into flour before cutting each cookie. Place on greased baking sheets. Bake in center of 190 degree C oven until edges are lightly golden, from 8 to 10 minutes. Remove cookies from sheet to a rack to cool.
Decorate with icing. Store in an airtight container, in single layers separated by waxed paper, in a cool place for up to one month<hr>

Makes 82 cookies
2 cups chopped glaceed cherries, mixed fruit or peel or combination
2 cups toasted blanched almonds, slivered or sliced
1 1/2 cup all purpose flour
1/2 tsp each of baking power and salt
1/2 cup unsalted butter, at room temperature
3/4 cup brown sugar
1/2 tsp vanilla extract
1/4 tsp almond extract or rum flavoring
1 egg, lightly beaten
1/4 cup lemon or orange juicePreheat oven to 190 degree C. lightly grease a baking sheet or coat with cooking spray. In a bowl, stir glaceed cherries with almonds until mixed.
In a medium-size mixing bowl using a fork, stir flour with baking powder and salt. In a large bowl, beat butter with brown sugar until creamy. Stir in vanilla, almond extract, egg and lemon juice. Stir in flour mixture. Mix in cherry mixture.
Drop by round teaspoonfuls, forming 1 inch mounds, on greased sheets about 1 inch apart. Bake in center of 190 degree oven until golden, from 10~12 minutes. Cool. Store in an airtight container at room temperature for up to 1 week.<hr>
