Curried Beef Stew
1/3 cup chopped onion
2 tsp curry powder
1 bay leave
1 lb Stewing beef cubes
1/2 cup each shredded cabbage and carrots
1/2 chopped green onion
In a large lightly oiled frypan, combine the first 3 ingredients and 1 cup water.
Cook over medium heat for 2~3 minutes
Add beef and simmer covered on stove or in 160 degree C oven for 1 3/4 hours. Add vegetables and cook covered for another 15 minutes. Season with salt and pepper to taste. Remove bay leaf and serve with rice.
