Boil the 雞腳 for about 15 mins then drop it into cold water for about an hour. Must change water. Then the 雞腳 will be 爽!

Do you mean that after boiling it for 15 mins,the chicken feet are soft enough ? Is it necessary to reboil it after taking out from cold water ?

If you want the 雞腳 crispy (爽), 15 or up till 30 mins is enough. Otherwise, it will be too soft. I usually boil it around 15-20 mins, then put it into cold drinkable (or filtered) water for 1 to 2 hours. This is the major procedure that make it爽. Must change water 6-7 times until the water remains clear.
Try this recipe, quite good. Put water, fish extract, sugar into a big bowl = juice, must enough to cover all the 雞腳. Keep it into the bowl for 4-6 hours. Drain out all the juice, put sesame oil onto the 雞腳 and serve.

Dear Rowan, thank you very much indeed and you are very helpful. But what should I do if I want the feet hot ? Do I just reboil it with soup ? Will the feet still crispy if I reboil them ?

Yes, you can reboil it with the soup to make it warm (or hot). To ensure it not too soft, try to reboil it in mid heat and turn the fire off once it got boiled. Wait for 5-10 mins. Do serve with sesame oil, it make it taste better. Hope you\’ll enjoy it.
