Participant看台灣的食譜時,經常見到高筋、中筋、低筋麵粉,但在香港都沒見過這些分類,只知道中筋是我們常見的麵粉,那麼其餘那兩種是否能在香港找得到呢?又或,它們有其他的名字呢?另外,我想問,自發粉又是什麼呢?台灣的叫法又是什麼?太白粉又是否等如粟粉呢?

Participant高筋麵粉;高粉=Bread Flour=High Gluten Flour
中筋麵粉;多用途麵粉;中粉=Plain Flour; All Purpose Flour
低筋麵粉;低粉=Pastry Flour;Low Gluten Flour
自發麵粉=Self-Rising Flour
太白粉=Potato Starch
玉米粉=粟粉=Corn Starch
再來米粉=粘米粉=Rice Flour
糯米粉=Glutinous Rice Flour
粉末狀黃色粟米粉= Corn Flour
細顆粒黃色粟米粉= Corn Meal
菱粉=Tapioca Flour<hr>
