泰式炸蝦餅
材料:
鮮蝦肉八兩
生菜二片
紅椒四隻調味料:
鹽1/2茶匙
糖1/6茶匙
胡椒粉少許
生粉一湯匙
雞蛋白一隻粉漿料:
雞蛋白一隻加生粉一湯匙拌勻酸甜汁料:
紅指天椒(切碎) 半隻
蒜茸一茶匙 1
洋醋1 1/2茶匙
番茄汁一湯匙
砂糖一湯匙
鹽1/6 茶匙
生粉1/2 茶匙*將以上各材料混合,慢火煮滾。
做法:
1. 蝦肉去腸,用鹽,生粉洗乾淨,放水喉下沖水十五分鐘,瀝乾及抹乾水分。用刀拍爛蝦肉,以刀背剁成茸,加入調味料,攪拌至起膠,放入雪櫃一小時。2. 手蘸粉漿,取適量蝦膠,做成小圓餅,黏上少許生粉,放回雪櫃一小時或一夜。將蝦餅放熱油中炸至金黃色,排在生菜上面,蘸酸甜汁料享用。
