六 人 分 量 用 材 料 如 下 ：
瘦 肉 十 二 兩 、
合 掌 瓜 一 斤 、
雪 耳 一 兩 、
冬 菇 仔 十 隻 及 無 花 果 十 二 兩 。

做 法:

是 將 瘦 肉 剁 碎 ， 加 少 許 鹽 然 後 再 略 剁 ， 水 滾 之 後 放 入 肉 球 慢 火 煲 。 合 掌 瓜 洗 淨 開 邊 ， 雪 耳 、 冬 菇 仔 浸 洗 ， 加 無 花 果 一 起 放 入 湯 中 煲 ， 二 小 時 火 路 便 足 夠 。

此 種 中 火 湯 不 像 老 火 湯 要 煲 上 四 小 時 ， 但 湯 味 和 老 火 湯 沒 有 分 別 ， 只 是 配 料 的 火 路 有 別 。 佛 手 瓜 肉 球 中 火 湯 清 熱 、 潤 肺 ， 最 主 要 是 湯 味 清 鮮 ， 佛 手 瓜 在 轉 熱 天 氣 飲 用 最 有 益 ， 有 健 肺 、 潤 燥 、 生 津 功 效 ， 切 片 炒 鮮 百 合 、 雪 耳 、 豆 乾 片 也 是 一 味 很 好 齋 小 菜 ， 配 沙 參 、 玉 竹 、 南 北 杏 燉 糖 水 也 是 很 清 潤 甜 品 。

三杯半去皮去籽的蕃茄丁(約五大顆)

一杯罐頭清雞湯(可撇去浮油)

一大罐蕃茄汁

兩大匙九層塔屑末

鹽與胡椒少許

作法：

三杯蕃茄丁、雞湯與蕃茄汁,一起倒入果汁機打勻,可視口味,自行添加少許鹽與胡椒。
將已均勻的湯汁倒入大碗中,加入半杯蕃茄丁與九層塔屑末,置於冰箱冷藏後食用。

鹽少許

做法:  
1.將雜丸、白菜洗淨，瀝乾水備用，粉絲浸軟。
2.將清雞湯和同等份量的水煮沸，可加鹽作為調味然後下粉絲，待粉絲變軟後，放雜丸合蓋煮1分鐘左右，最後放白菜，水沸後便成

蛋1個
味精少許

做法:  

1.半鍋水，約二大湯碗煮沸，加入玉米槳。
2.泥狀雞茸拌以1/2匙太白粉 ，加入鍋中。3分鐘後，將太白粉勾芡拌成濃 湯、調味、關火。
3.將散蛋緩緩倒入， 輕輕攪拌，蛋成細絲狀，灑上麻油數滴即可。

做法

• 蘋 果 洗 乾 淨 、 剖 開 四 角 、 去 皮 去 心 。
  
• 海 底 椰 、 密 棗 、 准 山 、 南 北 杏 洗 乾 淨 。
  
• 瘦 肉 洗 乾 淨 ， 飛 水 。
  
• 將 所 有 材 料 放 入 己 煲 滾 的 水 中 煲 十 分 鐘 後 ， 改 用 慢 火 煲 約 3 小 時 ， 加 鹽 調 味 ， 即 可 飲 用 。

　　南方網訊  中醫在治療和預防疾病上有“醫食同源”、“藥食同行”的理論，目前猖厥的非典型肺炎其病源正在加緊研究中，但從已有的研究成果中來說，積極的膳食營養和有效的藥膳飲食是可以增強人體的免疫力、提高人體的體質，從而在一定程度上起到預防非典型肺炎的作用，特推薦幾款藥膳的湯品──


    南杏桑白豬肺湯

    南杏桑白豬肺湯具清肺潤燥、養陰止咳的作用。主治燥熱傷肺，或肺腎陰虛，証見幹咳無痰，嚥幹喉燥，心煩口溫，舌尖邊紅，苔薄而燥。

　　[材料]南杏15～20克、桑白15克、銀花15克、豬肺250～350克。

　　南杏又叫甜杏仁，性微溫，味苦，辛，長於補肺潤肺燥且止咳喘，《醫學啟源》說它能“除肺中燥、治風燥在於胸膈”；桑白性寒，味甘、辛，善治肺熱咳喘而利水；銀花性寒味甘，功能清熱解毒；豬肺性平味甘，有補肺的作用，《增補本草備要》說“豬肺，補肺，治肺虛咳嗽。”合而為湯，既可清肺之燥熱，又可補肺之不足，既可鎮咳，又可袪痰，共奏清燥潤肺、化痰、止咳之功，是標本同治之湯品。

　　[烹制]南杏、桑白、銀花洗凈，用清水稍浸泡片刻；豬肺洗凈，切厚片，泡水中用手擠洗幹凈，放入開水中煮5分鐘，撈起再放入清水中稍泡片刻，滴幹水。然後一起放進瓦煲裡，加入清水800毫升（約8碗水量），武火煲沸後，改為文火煲2個半小時，調入少許生油和鹽便可。此量供2～3人用，宜每周2～3次飲用。


　　參麥雪梨瘦肉湯

    參麥雪梨瘦肉湯是清潤與清補同用的湯品，具清燥潤肺，益氣生津的功效。適用於肺燥，或氣陰不足，症見之幹咳無痰，嚥喉幹燥，鼻燥，氣逆而咳，心煩口渴等。

　　[材料]太子參30克、麥冬15克、南杏仁20克、雪梨4個、豬瘦肉500克。

　　太子參性平，味甘、微苦，功能補脾肺之氣，並生津養陰，《本草從新》說它能“治氣虛肺燥，補脾土，消水腫，化痰止咳”。麥冬性寒，味甘、微苦，功能潤肺養陰、益胃生津、清心除煩，《藥品化義》說“麥冬色白體濡，主潤肺，味甘性涼，主清肺，蓋肺苦氣上逆，潤之清之，肺氣得保。”南杏仁性平味甘，功能止咳、潤燥，《藥性論》說能“療肺氣咳嗽”。雪梨性味甘微酸涼，有清潤肺、生津的作用，《本草通雲》說它“生者清六腑之熱，熟者滋五臟之陰”，是常用的清潤果品。豬瘦肉功能滋陰潤燥。湯中太子參配麥冬能調補力大，雪梨配南杏可潤肺止咳。合而為湯，清燥潤肺之力大，並能益肺氣、養肺陰。可為防“非典”時期家庭飲用之滋養性湯品。

　　[烹制]太子參、麥冬去心洗凈，稍泡浸片刻；南杏用開水燙後去衣；雪梨洗凈，連皮切為多塊，去核；豬瘦肉洗凈，切塊狀。然後一起放進瓦煲裡，加入清水800毫升（約8碗水量），武火煲沸後，改為文火大煲1～2個小時，調入少許生油和鹽即成。此量可供3～4人飲用，宜每周2次。


    雪耳洋參燉燕窩

　　雪耳洋參燉燕窩具益氣、潤肺、止咳的功效，同時能提高人體的體質和抵抗力。為當今理想的清潤滋補品。

　　[材料]雪耳60克、西洋參片30克、燕窩90克。

　　雪耳又名銀耳，性平，味甘、淡，有滋陰潤肺、養胃生津的作用，是肺燥熱所致幹咳或咳血常用食療之品。西洋參性涼味甘，功能補肺氣、降肺火、潤肺燥、生津液，《本草理新》說它能“治肺火旺，咳嗽痰多，氣虛咳喘，失血勞傷”，燕窩性平味甘，有滋養肺陰、補氣潤肺的作用，《本草再新》說燕窩能“大補元氣，滋陰潤肺”。合而為湯，益氣滋陰潤燥之力更大，對氣陰不足、肺燥咳喘之症，則補而能清，潤而不膩，是滋補型的潤肺止咳湯品。

　　[烹制]雪耳用清水浸開，洗凈，摘小朵；燕窩用清水泡浸，洗凈，撿去毛、雜質；西洋參洗凈。然後一起放置盅內，加開水適量，燉盅加蓋，文火隔開水3個小時，調味供用。如愛甜味的，可把冰糖適量與各藥物一起放置盅內燉。此量可供2-3人用，宜每周2-3次。（編輯：何靜文）

金針雲耳雞湯



材料：

金針20克
雲耳20克
節瓜450克
老雞1只
瘦肉225克
紅棗4粒
姜2片
鹽適量

金針和雲耳用水浸片刻，清洗乾淨。

節瓜去皮，洗乾淨後切厚片。

洗乾淨老雞和瘦肉，放入熱水中稍燙後再沖乾淨。

紅棗去核後洗乾淨。

滾適量水，下金針、雲耳、節瓜、老雞、瘦肉、紅棗和姜片，水滾後改慢火煲2小時30分鐘，下鹽調味即成。
